Breakfast has always been something hit or miss , grabbed or forgotten. Changing the food I ate was a good excuse to revise my attitude to this first meal of the day. Although work day mornings are still fraught and food secondary to getting to work on time. Days off are different.
Today I saw some left over guacamole in the fridge – a rare find. The tomatoes looked so good. As did the soda bread. Breakfast Bruschetta was on the menu.
Salt , pepper, balsamic vinegar, olive oil, garlic and basil. Chopped tomatoes. I’m guessing a bit of fresh chilli would also be good in here or some chipotle paste but today I had neither of these.
I have to say the end result was pretty tasty. Though Im still a sucker for peanut butter.
